The US pizza market is a mature, developed market, and it’s also pretty darn competitive.
Franchised pizza chains account for around 60% of the market. It’s estimated that there are over 150 well known pizza franchises in operation plus an unknown number of local and regional pizza franchises.
I remember working in a full service Italian restaurant many years ago, that did a ton of pizza business- eat-in, and take-out. One day, I asked one of the owners why there were so darn many pizza shops.
“Joel,” he said, “my mark-up on pizza is about 800%.”
